Gluten Free Garlic and Herb Naan bread

We all love a good piece of naan bread with our homemade curries or stews but if you’ve made authentic naan bread before, you know it needs a little time and patience. This no knead garlic an herb naan recipe is a great way to still enjoy  fresh naan bread with your favourite curries in little to no time. Using natural yoghurt and baking powder instead of  yeast is the magic trick that gives this naan bread amazing texture and flavour. Honestly it’s just like the real deal!

If you don’t have natural yoghurt maziwa mala (buttermilk) works just as well! So I always stock either for creamy dishes or quick breads.

Ingredients

  • 1 Cup G.F Flour (or All Purpouse)
  • 1 Tbsp Baking powder
  • ½  Tsp Sea salt
  • ½  Tsp pepper
  • ½ Tsp Sugar
  • 1Tsp Coriander Powder
  • 2-3 Garlic Cloves (Minced)
  • 1/2 Cup Natural Yoghurt or buttermilk
  • 1 Tbsp Olive oil
  • Fresh Coriander Chopped (Handful)
  • ½ Cup garlic butter

METHOD

  1. In a large bowl whisk together flour, salt, pepper, sugar, coriander powder & baking powder.
  2.  Next add in the yoghurt, olive oil,  chopped coriander & half of the minced garlic. Mix with a wooden spoon to combine, then use your hands to bind the dough into a smooth ball.
  3. Place the dough onto a floured surface. Using a knife divide dough into 4/ 6 even balls. Prepare a basket or plate lined with a clean tea towel for the cooked naan.
  4. Pre-heat a heavy nonstick skillet to medium-high heat. Next combine the remaining minced garlic & butter and melt in the microwave for 20-25secs.
  5. Thinly roll out one dough ball at a time, dusting with flour if needed. Using a pastry brush coat the naan with garlic butter then place on hot skillet. (butter side facing down).  Cook for 2 minutes. Air bubbles will begin to form as the naan cooks. Coat the top side with more garlic butter flip & cook for another 2 minutes until golden brown.  Place on a plate with a tea towel and cover to keep warm. Repeat the process until each naan bread is cooked.

Jemutai's TIPS

The stickiness of the dough will vary depending on the yoghurt used. Feel free to add a bit more flour if needed.
