Easy Preserved Tomatoes

If you have a surplus of tomatoes here is a quick guide on how to preserve them. Plus once you know how to you may never buy tinned tomatoes again. It’s realy simple and also saves you some money in the long run.

 Use them to make pasta sauce, shakshuka, homemade ketchup, relishes..really the list can go on and on.

If you’d ratehr just buy tinned tomatoes  this is the brand I like using. It has a nice balance of acidity to sweetness from the tomatoes.

Directions:

1.Bring a pot of water to the boil with a pinch of salt

2.Wash tomatoes then boil for 2-3 mins/until the skin breaks

3. Transfer to an ice bath, peel of the skin then portion and store in the freezer for up to 3 months.

4. Portion about 4 tomatoes per container for easy weeknight dinners.

*Pro Tip use ripe tomatoes that are still slightly firm.
