Crunchy,Sweet and Healthy
I certainly wasn’t joking when I said I love having dessert for breakfast. Crunchy, sweet, silky and fresh sounds like a good combination. Strawberry granola parfaits make early morning breakfast more exciting and keep you satisfied for longer. All those layers look so delicious and certainly taste wonderful. Loaded with antioxidants, protein, and good carbohydrates, it’s certainly one to change you’re mind about store bought granola.
So without further a do let’s make breakfast.
Strawberry Granola Parfait
- 1 Banana
- 1 Cup Strawberries
- Honey to Taste
- Natural yogurt
- Cinnamon spiced Granola
Cinnamon Spiced Granola
- 2 cups Rolled oats
- 1Tbsp coconut oil
- 1/4 cup Honey (4Tbsp)
- Pinch of sea salt
- 1 Tsp Cinnamon or Mixed Spice
- In a heavy pan heat coconut oil then add in the oats, cinnamon and salt. On a medium flame. Toast for about two minutes stirring constantly then add honey and toast for a further two minutes until golden brown.
- Remove from the heat then transfer the granola to a baking tray and cool. The granola will harden as it cools. Once cooled break it up into smaller clusters then store in an airtight container or food bag.
- To make the parfaits slice banana and strawberries then begin the layering process. Start with yogurt at the bottom then a layer of granola then a layer of fruit. Repeat for until you have 2/3 layers (depending on the size of your glass) top with pumpkin seed and enjoy.
