Now this tea comes form a place of love. It takes me right back to uni days when all you needed was a little comfort from home (In this case Kenyan tea) or a refreshing cold drink to cool down. I’d always make a massive batch of iced tea to enjoy on hot summer days or whenever I needed a cold drink. It’s refreshing, thirst quenching, cheap and perfect for tea lovers. So without further a do let’s get brewing.
Ingredients:
- 4 Ketepa tea bags
- 1 Yellow lime (These limes are from Mombasa and you can find them in Chandarana or any supermarket)
- 3 Tbsp cane sugar
- A few mint sprigs
- 2-3 Cups drinking water
Method:
- In a jug, brew the 4 tea bags with a cup of hot water for about 2 minuets. The longer you leave it the stronger the tea is. You want the tea to be quite strong at this stage because once you add cold water and ice the drink will be diluted. So I usually brew mine for about 5mins while I make a snack to go with it.
- Next top up the tea with drinking water then add in the sugar and give it a stir. Once again you want to make it a bit sweeter than usual so the flavours are retained after the ice is added. Finally slice the lime into four wedges and squeeze in the juice. Add the flesh of the lime to the tea with some fresh mint for presentation then stir and top up with ice. Yum!
Tip: Make the tea the day before and let it infuse overnight, then pop it in a flask/bottle add some ice and there’s your cold drink to go.
