I’m a fan of 4 O’clock tea and treats. I guess being part luhya, the need for tea flows through my veins all day. Though instead of having a piping cuppa I decided to chill things down a bit and make some flavoured ice tea. Over the summer season in Nairobi it can get quite hot and dry. So staying hydrated is in order and ice tea is just the answer. This strawberry ice tea is not only refreshing but smells like sophisticated candy!
Ingredients:
2 Tea bags of Kericho gold Strawberry and Vanilla
3 sprigs of fresh mint Leaves
1 Tbsp of simple syrup
Boil a kettle of water and brew the tea for about 15 minuites.
Once the tea is relatively cool, add the syrup and mint then refrigerate for at least 1 hour.
Add the ice about 5 minuites before you serve

Tip: Before adding the mint gently rub the mint leaves between your palms to release the natural oils and flavours.
