They say breakfast is the most important meal of the day. Though the struggle to get a healthy breakfast first thing in the morning can sometimes be a kerfuffle. So if you’re not making smoothies to go lets get to it. This red velvet smoothie is a light version of the original red velvet smoothie from my 10 Days of Smoothies. It works great as a post workout smoothie or light breakfast shake. With the added bonus of cashew butter for a creamy finish and added protein.
1 cup strawberries
Half a small beet
Fresh ginger (about an inch) Adding fresh ginger to smoothies will help keep you warm
1 level Tsp Cinnamon Powder
2 Tbsp vanilla yoghurt
1 Tbsp Cashew Butter (or a handful of Raw Cashews)
1 Cup Milk of choice or Water
Start by washing the strawberries then beetroot ensuring to thoroughly wash the beetroot and ginger if you’re not going to peel it. Once all the ingredients are prepped, add either milk or water to the blender first followed by the fruit, yoghurt, cinnamon and cashew butter. Feel free to leave out the ice if your not a fan of it. Blend all the ingredients until smooth.
For the layers add about 1Tbsp of yoghurt to the bottom of the glass and swirl around, slowly pour in the smoothie then top it off with a sliced strawberry.
